For the most part, any recipe involving more than 4 ingredients just confuses me. I’m not particularly good with them (which is weird, given my tech writer background, but whatever). But my mom and I were talking about gazpacho, and she sent me this recipe. I know many people would just have all these ingredients laying around at home and could whip this together like nothing. However, those of us who live on microwave macaroni and cheese (even if it *is* the fancy organic kind), find such things as “white wine vinegar” perplexing. I am making it my goal for next month (when I’m off work), to actually purchase the necessary ingredients and make this.

4 cups cold tomato juice
1 small well-minced onion
2 cups diced fresh tomatoes
1 medium minced green bell pepper
1 tsp honey
1 clove crushed garlic
1 diced cucumber (larger pieces than the onion or pepper)
juice of ½ lemon
juice of 1 lime
2 tablespoons white wine vinegar
1 teaspoon basil
dash of ground cumin
¼ cup chopped fresh parsley
dash of Tabasco sauce
1 tablespoon olive oil
salt and pepper to taste

Combine all ingredients, and chill for at least 2 hours (better if chilled overnight).
